Strawberry Cheese Ring Appetizer

For Foodie Friday, I thought I'd share a yummy appetizer that I've made several times and is always a big hit. Plus, it's super easy and fast...can't beat that!

The recipe comes from Paula Deen's cookbook, The Lady & Sons Savannah Country Cookbook...it's a great cookbook with lots of good Southern cooking. You can find it on Amazon.com, if you'd like a copy.



This appetizer is a Strawberry Cheese Ring...I know, sounds kind of weird...but it sure is tasty! :-) If you click on this pic, it will enlarge A LOT, so you can copy down the recipe.



Here are the ingredients you will need...



Just throw them all in your mixer...





Follow the directions in the recipe to shape the cheese mixture into a ring...



I go one extra step. I like to add chopped pecans all over the surface...I just think it looks prettier this way. :-)



Then add your strawberry preserves into the center...and you're all done!

I love this and I know it will be something I want to make! It sounds so good and yummy as it looks! I started to order this book for the longest! Now I have to have it! I would love so to go to her home. lol She came to Jackson, and I got tickets for my daughter and I. Well I could not go, the hospital decided to put me in my resort room, so Jennifer and her husband went and had a blast! Thanks for sharing this I just have to make this! I think it would be great even with tea! I love anything cream cheese. lol

I do love your blog and have enjoyed your decor since RMS (caniquitmyjobanddecorate). Question: the recipe reads 16 oz(2 cups) of cheddar with a handwritten "equals 4 cups"...did you decide to add 2 extra cups of cheese to the recipe because of taste? I am going to try this and wanted to make sure I make it as you recommend :o)

Hi Caniquitmyjobanddecorate, I remember that name from RMS...always loved it!
I know this is confusing...was afraid my penciled-in notes might confuse. The reason I jotted down four cups is when you purchase the cheese, in the 2 cups size bag (like I have in the pic) it is apparently equal to 8 ounces, since that's what it has on the bag. So it takes 2 packages of cheese in the 2 cup size, to get 16ounces. So I just put 4 cups on there to remind myself what to buy. I know a cup is 8 ounces of liquid, but apparently when it's packaged cheese, it takes 2 cups of grated cheese to equal 8 ounces, 4 cups to equal the 16 ounces that the recipe calls for. Click on the pic that shows all the ingredients and you'll be able to read the package...which may help this explanation to make more sense. :-) Thanks for that question...I had a feeling someone would ask about that, eventually. :-) Susan

I agree that measuring cheese can be confusing since cheese is sold by weight not by volume. To counteract this, is why I think, manufacturers include a volume measurement on their packages. The only measure I know that is the same both in volume and weight is something the viscosity of water. Alton Brown on the Food Network says "a pint is a pound the world around". Another way of saying that 16 ounces of water by volume weighs 16 ounces or 1 pound.

Since I no longer entertain, I will definitely cut this recipe in half for two people and will probably still try to freeze part of it. I do have this book but have never tried this recipe. Thanks for the endorsement.

I make a very similar recipe and it is delicious! I put everything except the preserves in a pie plate and then spread the fruit on top. Yummy with Ritz crackers.
